Description: A regulatory procedure intended to ensure that retail food facilities and proposed operational processes are properly designed and that sanitary practices are implemented in order to serve their intended purposes.

  • Description: Verifying various capacities that may be included in a Plan Review submission, and that may be required.

    Terminal Competency:

    Verify that the capacities included in the submission are adequate.

    3. Evaluate dry storage space.

    4. Verify lighting intensity levels.

    5. Verify that mechanical ventilation requirements have been met.

  • Description: Determining that equipment being used in a food establishment is sufficient and adequate.

    Terminal Competency:

    Determine if the proposed equipment is adequate for the operation.

    Enabling Competencies:

    1. Explain how an intended menu impacts equipment requirements.

    2. Determine if the storage equipment is adequate for the intended use.

    3. Determine if equipment is adequate for warewashing.

    4. Determine if equipment is adequate for non-permanent and undefined food operations.
