The curriculum used in this capstone experience is intended to leverage students’ critical thinking and problem-solving skills and to provide faculty with resources to teach food product development efficiently. The curriculum team was comprised of former product developers who have moved into academia, college professors who teach product development and other food-science related courses, an instructional designer/project manager, and a research scholar who conducted assessments throughout the project.

This product development curriculum project was started in 2021 via a funded USDA NIFA project called
“FIRST in PD Teaching: Food Innovation, Research, Science, and Technology in Product Development Teaching” with seven partner universities to create a novel, relevant, and up-to-date product development curriculum to provide food science students a relevant and valuable capstone experience.
